Oatmeal Pancakes

I came home this morning after teaching a Sunrise Cycling class and decided I wanted something a little bit more exciting than my regular bowl of oatmeal…and pancakes sounded amazing!

This is the simples, healthiest, and my favorite pancake recipe.

Ingredients:
1 banana
2 eggs 
1 cup uncooked oatmeal
1 tsp vanilla extract
1/2 tsp baking powder (not baking soda because we are not adding anything acidic to activate it)
1 tsp cinnamon 
1/2 tsp sugar/stevia [optional]

This is the stuff we want!

Makes ~9 small pancakes

Serves: 2

Recipe:
Put all the ingredients in a blender. Blend for ~20seconds until you have a nice smooth, thick batter.

Add everything to your blender….
Voila! 20 seconds later you have a nice thick, smooth, batter.

Spray a skillet and bake away! Be sure to keep an eye on them because they brown quickly!

I enjoyed 3 pancakes after making these and put the rest in the freezer. They defrost very nicely in the toaster for a quick grab-n-go breakfast.
