A good friend of ours shared this recipe with us a while back and it has become is absolutely a keeper in this household! We didn’t know what to make for dinner tonight but after a quick glance in the pantry and finding 2 cans of salmon the decision was made!
If you have left over salmon this is a perfect recipe to transform those leftovers into an entirely new meal!
Ingredients for the Patties:
2 Cans Salmon [or left over fish, or canned tuna]
1/4 Cup Plain Greek Yogurt
1/4 Cup Green Onions
1 Tbsp Lemon Juice
1 tsp Cajun seasoning
1/2 tsp Garlic Salt
1 tsp Dijon Mustard
1 Tbsp Bread Crumbs
**Dill would be a delicious addition as well!
Ingredients for the crust:
1 Cup Bread Crumbs
1/4 Cup Yogurt
1 Tbsp Dijon Mustard
Yield: ~6 cakes/patties
In a bowl mix all of the ingredients together.
Shape into patties.
For the Crust:
Get 2 bowls; in one beat an egg, in the other dump about 1cup of bread crumb. Place the patties in the bread crumb bowl and thoroughly coat, then coat with the beaten egg, and add one final coat of breadcrumb.
Spray skillet with oil and cook patties until browned on either side.
For the Sauce:
Simply combine and mix the yogurt & dijon mustard.
Serving Suggestion: add a green salad and a side of quinoa of bulgar. We added left over orzo & broiled asparagus.
