Apples & Oatmeal

Kickstart your day with a heart healthy bowl of complex carbohydrates filled with fiber and delicious flavors!!

I love oatmeal but sometimes I get bored of my plain oatmeal routine (oatmeal, cranberries, flax seed, water – microwaved & covered with cinnamon). Today was one of those days. When I came back from teaching my Sunrise Cycle class this morning I looked around the kitchen to see if we had anything that would spice up my typical routine.

This recipe is packed with fiber to keep you full longer and prevent your blood sugars from spiking & dropping too quickly. 1cup of cooked oatmeal has ~4grams of fiber and a medium size apple (with the skin) has an additional ~4grams of fiber. This is a great start for us ladies to reach our daily fiber goal of ~25grams per day [guys you want about 35grams of fiber in your daily diet].

I add almond milk because it’s low in calories and still provides a good source of calcium & vitamin D (essential for our strong bones & healthy immune system!)

To add some healthy omega-3 fatty acids to this meal I added walnuts and ground flax seed! These healthy fatty acids will help fight inflammation and help lower your LDL-cholesterol levels — so not only do they taste good, they also do a lot of good for our bodies! Slide1

Ingredients:

1cup instant oatmeal (uncooked)

1 medium sized apple

1cup almond milk

1/4cup walnuts

2Tbsp ground flax seed

1tsp cinnamon (I add more because I have an obsession with this stuff)

1/2 tsp pumpkin spice mix

1/4 tsp nutmeg

1/2 package stevia — if you want a sweeter flavor.
Recipe:

So simple! Prep everything, dice the apple, throw it all in one pot. Cover with a lid and let boil until most of the milk has disolved and the apple pieces are soft.
